Types Of Tea

There are four distinct types of tea; white tea, which is comprised of only the buds of an extremely rare tea plant, and is unfermented. It is very light in the cup and has a delicate flavor. Green tea skips the fermenting process making it very nearly caffeine free. It is light in appearance and flavor..  Oolong tea is partially fermented. It has a unique fragrance and interesting character.  It is considered to be the halfway point between green and blck teas.  Black Tea is fully fermented. It accounts for nearly 98% of all exported tea.

Brewing The Perfect Cup Of Tea

Fill the kettle with fresh, cold water and heat to a rolling boil (almost to boiling for green tea.)

Warm the teapot by swirling steamy water inside it. Pour it out.

Measure out about 1 level tsp. of tea per cup. Place into the teapot or infusing basket.

Pour the water over the leaves, cover, and infuse to taste -- on average 3-5 minutes.  Most green teas require a brief infusion, about 2-3 minutes; black and herb teas brew a bit longer, about 4-5 minutes.

Remove the infuser or use a strainer for the leaves. Pour into a cup and enjoy sip by sip.
