French Banana Pancakes

These pancakes have been a Christmas morning tradition for Jerry and I for about the last four Christmas's. They are delicious!  They are more like a crepe than a pancake, very light,

Pancakes:
1 cup all-purpose flour
1/4 cup confectioner's sugar
1 cup milk
2 eggs
3 Tbs. butter or margarine, melted
1 tsp. vanilla
1/4 tsp. salt

Filling:
1/4 cup butter or margarine
1/4 cup packed brown sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup light cream
2-4 bananas, halved length-wise
Whipped cream and additional cinnamon, optional (but recommended)

To make pancake batter, sift flour and confectioner's sugar into a mixing bowl. Add milk, eggs, butter, vanilla and salt; beat until smooth. Heat a lightly greased 6 inch skillet; add about 3 Tbs. of batter, spreading to almost cover bottom of skillet. Cook until lightly browned; turn and brown the other side. Remove  to cool, repeat with remaining batter, greasing skillet as needed.
For filling:  melt butter in a large skillet or pan. Stir in brown sugar, cinnamon, and nutmeg. Stir in cream and cook until slightly thickened. Add half of the bananas at a time to the skillet; heat for  2-3 mins., spooning sauce over them. Remove from heat. Roll a pancake around each banana half and place on platter. Spoon sauce over pancakes. Top with whipped cream and a dash of cinnamon if desired.
I have found that this recipe only makes about enough for 2 people, 2 pancakes each, esp. the sauce does not make enough for more than 2 people.







"Cracker Barrel" Hashbrown Casserole.

2 #  bag frozen hashbrowns, thawed
1 medium onion, chopped fine
6 Tbs. melted margarine
1 #  sour cream
8 oz. shredded cheddar cheese
10 ozs. cream of chicken soup - condensed
Topping:
crushed Corn Flakes
4 Tbs. melted margarine

In a 9x13 pan, make single layers of the folowing:  potatoes, onions, 6Tbs. melted margarine, sour cream, cheddar cheese and soup.  Sprinkle top with crushed Corn Flakes. Drizzle margarine over top. Bake at 350 degrees for 1 hour or until bubbly  and piping hot.
