Homemade Chicken Fettuccine
8 ozs. fettucine pasta 1 tsp. garlic salt
2 Tbs. butter 1/8 tsp. black pepper
3 skinless, boneless chicken breasts, cut into chunks
1 1/2 cups heavy cream
1/4 cup grated parmesan cheese/ 8 ozs. sliced mushroom
Bring a large pot of lightly salted water to a boil. Add fettucine and cook for 8 - 10 mins. or until al dente; drain. In a large skillet, brown chicken and mushrooms in butter until chicken is cooked through. Season with garlic salt and pepper. Add cream and cook until thick, stirring constantly. Add Parmesan cheese when at desired consistency. Serve over noodles. Serves 4.
Serve this dish with a green salad, and garlic bread. And then last , but not least, have this delicious pie and coffee.
Chocolate Peanut Butter Pie
1 prepared chocolate pie crust 1 cup cup peanut butter
1 (11.75 oz.) Hot fudge ice cream topping, divided
Beat together 1 cup peanut butter, cream cheese and sugar in a medium bowl with an electric mixer until well combined
Gently mix in 3 cups whipped topping until thoroughly combined. Spoon mixture into pie shell, smooth mixture to edges of pie with spatula. Reserve 2 TBS. of hot fudge topping into the corner of a resealable plastic bag. Microwave remaining topping on high for 1 minute and stir. Spread topping over pie, covering entire peanut butter layer. Refrigerate until set. Then spread remaining whipped topping (1 1/2 cups) over fudge layer, being careful not to mix the two layers. Cut a small corner from bag containing fudge topping. Squeeze bag to drizzle over top of pie. chill until ready to serve.
Place 1 chicken breast, boned side up, between 2 pieces of plastic wrap or waxed paper. Working from center, greatly pound chicken with the flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wrap. Repeat with remaining chicken breasts. In medium bowl, combine bread crumbs, Parmeson cheese and parsley; mix well. Dip chicken in beaten egg; coat with bread crumb mixture. Preheat oven to 350 degrees. In 8" square baking dish, place chicken breasts. Bake for 30 mins. or until juices run clear. Meanwhile, heat spaghetti sauce. Sprinkle chicken with mozzarella cheese; cover dish to melt cheese; serve with spaghetti sauce. Makes 4 servings
Serve this dish with steamed broccoli, sprayed with butter spray; 0 points. And with a green salad. Then finish your meal with one of these delicious pies. I couldn't make up my mind as to which one was best, so I included both.
Snickers Pie
1 pint of vanilla non-fat frozen yogurt, softened
2 Tbs. chunky peanut butter
1/2 pkg. sugar free chocolate pudding mix
1/2 cup non dairy topping
1 tsp. chocolate syrup
In a large bowl; mix the 1 pint vanilla frozen yogurt, (softened in microwave for 1 min.) peanut butter, non dairy topping, and the pudding mix.together. Mix well and pour into 8" pie tin. Freeze until set. Drizzle 1 tsp. chocolate syrup over entire pie in swirl motion before serving.
Serves 8. 3 points per serving
Mississippi Mud pie
3/4 cup flour 1 cup 2% or skim milk
1/3 cup lite margarine 1/2 cup lite cream cheese
1/2 cup lite whipped topping 1/2 cup water
1/4 cup confectioners sugar
1 small pkg. sugar free chocolate pudding mix
Heat oven to 350 degrees. Combine flour and margarine. Spread evenly over bottom of 9" pie pan. Bake 15-20 mins. until golden. Combine 2 Tbs. whipped topping, cream cheese and sugar. Stir until smooth and spread over bottom of cooled pie crust. In another bowl, whisk together the pudding mix, milk and 1/2 cup water until smooth. Spoon on top of cream cheese layer. Top with remaining whipped topping Chill several hours.
